A complete recipe to make best spicy strawberry gazpacho

Gazpacho is a soup that is usually made with vegetables like cucumber, pepper, tomato, and onion. Sometimes this spicy soup is also made with a combination of vegetables and fruits and served cold. Chilled glass display make sure that your delicious gazpacho is served at the perfect temperature.

This is a Spanish cuisine that is widely eaten in Portugal and Spain during hot summer days. In strawberry gazpacho, tomatoes are swapped with strawberries that makes it full of nutrients. You can make it in a blender or food processor before the dinner or ahead of lunch. But serve it fresh the same day you make it.

Here is the recipe for spicy strawberry gazpacho:

Ingredients:

To prepare spicy strawberry gazpacho, you need ½ cup of extra-virgin olive oil, 2 crushed garlic cloves, and 2 springs thyme. You also need 1 ½ cups of whole-grain bread, 6 cups of hulled and quartered strawberries, and tabasco sauce.

Moreover, 2 ¼ cups of peeled and diced cucumber, 1 ¼ cups of red bell pepper, and ¾ cup of diced green bell pepper are needed. Other than these ingredients, you need 6 tablespoons of tomato juice, 3 tablespoons of vinegar, and 1 ½ teaspoons salt. 

Instructions:

Step 1: Prepare the Bread:

First, you need to cut the bread into 1-inch cubes after removing the crust. Then take a small pan and put it over medium to high heat. Take 1 tablespoon of olive oil and coat the pan. After that add 1 clove of garlic in the pan and wait until it begins to sizzle. Then add bread cubes in the pan and toss occasionally. Don’t burn the bread, be careful.

Add the thyme in the pan and keep tossing the bread until it turns golden brown. Then transfer the bread cubes to a bowl and discard thyme and garlic.

Step 2: Make the Soup:

In the bowl that already has golden brown bread cubes, add cucumber, strawberries, tomato juice, and remaining olive oil. Toss the ingredients and add remaining garlic clove, peppers, salt, and vinegar to the bowl. After tossing the ingredient, cover the bowl with plastic wrap tightly. Keep the bowl at room temperature for 4 to 5 hours.

Take a blender and pour the mixture in small batches and blend it at high speed. Blend the ingredients until the mixture is smooth. Then with the help of chinois, strain it and put it in the refrigerator until very cold. You can always season it if you want with Tabasco sauce, red vinegar, and salt.

Step 3: Croutons for Garnish:

Heat a pan on medium-high heat and coat it with olive oil and then add the garlic. When the garlic starts to sizzle, add the bread cubes in the pan. Add the thyme in the same pan and continue tossing the bread cubes until golden brown. Then line the baking sheet with a paper towel and transfer the bread cubes to it. Discard the thyme and garlic and season bread cubes with salt.

Step 4: Serving the Spicy Strawberry Gazpacho:

Serve the delicious spicy strawberry gazpacho with croutons. You can also garnish it with olive oil and tiny basil leaves.
